Dinner Rolls

This is a go to bread for your Christmas/Thanksgiving meal. The shaped rolls can be refrigerated overnight which makes it very convenient. The bread is slightly dense but still soft, fluffy, and delicious. It is perfect to soak up the gravy on your thanksgiving dinner plate. 

Makes – 15 rolls

  1. Adjust oven rack to middle position and heat oven to 200 degrees. Turn off the oven when the oven reaches 200 degrees.
  2. Add milk, honey, shortening, and 3 tablespoons of butter in a glass bowl. Microwave for about 2 minutes. The milk mixture should be warm to touch (110 degrees Fahrenheit). Stir the mixture.
  3. Mix 5 cups of flour, yeast, and salt to a standing mixer bowl. Fit the stand mixer with a  dough hook and let the mixer run on low speed. Slowly add the milk mixture to your flour mixture.  Once the dough comes together add 1 egg. Increase the speed to medium and mix until the dough is smooth (about 2 minutes).
  4. Knead the dough briefly to form a nice smooth ball. Cover the bowl and place it in the turned off oven until the dough doubles in size (about 2 hours).
  5. Line 13 by 9-inch baking dish with Aluminum foil. The foil should hang on all sides, Grease foil with cooking spray or butter.
  6. Deflate dough on floured surface and form a rough square. Using a knife cut the dough into 15 equal parts (3 equal strips lengthwise and 5 equal strips breadthwise). Place the dough ball on a work surface and cup it with your palm and move in circles to form a smooth round ball. Place it on the prepared baking dish. Cover baking dish with plastic wrap and return to turned-off oven until dough has doubled in size (about  2 hours).
  7. Heat oven to 375 degrees. Unwrap baking dish and brush rolls with egg wash (1 beaten egg). Bake until rolls are deep golden brown20 to 25 minutes.
  8. Remove from oven and cool on wire rack for 5 minutes. Using handles of foil sling, remove rolls from baking dish and cool for another 5-10 minutes. Serve.
